Food Friday: Hot Smoked Trout and Strawberry Salad

This was such a refreshing salad and would be perfect for a summer lunch or as a quick and easy dinner. The Hot Smoked Trout was from Woolies and combined perfectly with the strawberries that gave a delicious sweet tang of flavour.



Ingredients:

For the Salad

1 Sliced Hot Smoked Trout (with black pepper, mustard and dill)
1 Avocado
2 Handfulls of Mixed Baby Greens
1 Round of Feta, crumbed
8 Medium-Large Strawberries
Cucumber
1/2 a medium hot serenade chilli (optional)
Small Handful of Raw Cashew Nuts

For the Dressing

A Pour of Olive Oil
A Dash of Balsamic Vinegar

Method:

  1. Toss in the Mixed Baby Greens - you can roughly chop these if you like
  2. Cut all Veggies/Fruits (except chilli) to your liking. I decided to roughly slice all ingredients for this salad to give it a nice texture.
  3. Crumb in feta cheese round and roughly break the trout with your hands or with a fork
  4. Finely chop in the chilli (we removed the seeds so it wouldn't be too hot)
  5. Roughly chop the cashews and keep to the side.
  6. Pour all the dressing ingredients into a bowl or shaker and mix together.
  7. Pour over Salad ingredients 
  8. Sprinkle Cashews over just before serving so they maintain their crunch.
  9. Enjoy!


I served this dish with some cucumber and strawberry infused water.
