Food Friday: Honey Toasted Coconut and Strawberry Oats



We make "Special" Breakfast on the weekends and one of our favorite is Oats. It's such an easy and tasty breakfast option and it keeps you full for sometime especially when you're running around doing errands on the weekends.


Ingredients:

1/8 cup of finely grated coconut
A Drizzle of Honey
1 Cup Woolworths Rolled Oats
2 Cups Low Fat Milk (can use any other type of milk too i.e. Almond, Soya)
1 tablespoon of Vanilla Essence
5 Medium Strawberries lightly mashed with a fork
a sprinkle of Woolworths Simply Toasted Coconut Pieces (optional for decoration and really tasty to snack on while preparing the breakfast)


Method for the Oats:

  1. Put the grated coconut and the honey in a pot - coconut should begin to slightly brown (careful it doesn't burn)
  2. Add the mashed strawberries and mix into the mixture 
  3. Add the oats and mix everything in (keep the stove on a low heat)
  4. Carefully add the milk to oats while stirring
  5. Put the lid on and keep on the stove for about 5 minutes until oats are at a creamy consistency - make sure you watch it so that the oats don't over-spill - mix it occasionally.
  6. Take the pot with the oats off the hot stove and leave it with the lid on for about an extra 3 minutes
  7. Sprinkle with Woolworths toasted coconut pieces (if you haven't devoured the whole tub) just before serving so they maintain their crunch.
  8. Enjoy!
