We often eat a delicious fresh salad during the week in Summer and with the weather getting warmer, I decided to try out a new salad combo and was inspired by the delicious in-season Papaya's and a packet of Dried Goji Berries found at Woolworths.
Ingredients:
For the Salad
1 Medium Papaya1 Avocado
2 Tomatoes
2 Handfulls of Mixed Baby Greens
1 Round of Feta, crumbed
1 Large Smoked Chicken Breast
Cucumber
Small Handful of Goji Berries
For the Dressing
A Pour of Olive OilA Dash of Balsamic Vinegar
A Squirt of Wellington's Sweet Chilli Sauce
A teaspoon of sesame seed oil
Method:
- Toss in the Mixed Baby Greens - you can roughly chop these if you like
- Cut all ingredients (except feta and Goji berries) to your liking. I decided to cube all ingredients for this salad
- Crumb in feta cheese round and add in the Goji berries
- Pour all the dressing ingredients into a bowl or shaker and mix together.
- Pour over Salad ingredients
- Enjoy!
